Madeleines with honey and saffron

Ingredients

  • 90g almond powder
  • 180g icing sugar
  • 90g flour
  • 6 egg whites
  • 180g salt butter
  • 2 tablespoons of honey
  • 2 pinches of saffron powder

Preparation

  1. Mix the sugar, the almond powder and the flour. Add the egg whites one by one. Melt the butter until obtain a « hazelnut » color. Filter it and let it cool. Add it to the preparation.
  2. Add the honey and the saffron.
  3. Keep it in a fridge during 2 hours (minimum).
  4. With a teaspoon, fill the madeleine tin (covered with butter) and put in the oven at 200°C, durong 10 or 12 minutes. Madeleines have to be golden.
