Madeleines with honey and saffron
Ingredients
- 90g almond powder
- 180g icing sugar
- 90g flour
- 6 egg whites
- 180g salt butter
- 2 tablespoons of honey
- 2 pinches of saffron powder
Preparation
- Mix the sugar, the almond powder and the flour. Add the egg whites one by one. Melt the butter until obtain a « hazelnut » color. Filter it and let it cool. Add it to the preparation.
- Add the honey and the saffron.
- Keep it in a fridge during 2 hours (minimum).
- With a teaspoon, fill the madeleine tin (covered with butter) and put in the oven at 200°C, durong 10 or 12 minutes. Madeleines have to be golden.
